An easy and delicious endive recipe that includes blue cheese, smoked salmon and avocado. These traditional stuffed endives of Spain one of Best mediterranean food make a great addition to any meal party or holiday feast.
My first experience of having was afflicted with filled endives was when it was while in Madrid at my sister-in-law's home. My first year of New Year's celebrations spent with my husband's family. We were in Bilbao (Northern Spain) which is where we'd lived for just one or two months. Everyone brought food to the dinner, and we made a decision to bring bottles special Cantabrian anchovies and slices of different festive turrones and plates full filled with sweet and sour langostinos. I was unsure of what to expect, other than an evening of warmth with my family and plenty of delicious food.
New year's Eve marks an extremely unique celebration in Spain in which everyone comes together with their families and feasts on a variety of traditional seafood as well as meat and poultry dishes as well as a variety of other food items like salads, embutido and special cheeses and cold cuts. The dinner starts at 10:10 pm and concludes with the countdown for the new year, as we eat grapes and watch the clock strike 12 in the hope of a happy and healthy New Year.
In the first New Year's Eve I was in Spain I sat at the table, and the seafood and salads were what caught my eye. My sister-in-law made stuffed endives from the smooth blue cheese spread as well as an anchovy. I was awed by this traditional endive recipe and have been making stuffed endsives since then.
INGREDIENTS :
- 1/2 medium onion cut into pieces
- 2 ripe avocados, cut into small cubes
- 1 Cup cherry tomatoes cut in quarters (about 15 cherries)
- 8 ounces of smoked salmon broken into smaller pieces
- 2 tablespoons extra olive oil that is virgin
- 1 tbsp apple cider vinegar
- 3- 4 endive or sub. ice berg lettuce
- 6 ounces blue cheese
- Salt and Pepper, as desired
INSTRUCTIONS :
Mix all the ingredients, excluding blue cheese and endives in one bowl.
Wash the endive thoroughly and then separate it into leaves.
Fill the leaves of endive with the filling.
Sprinkle blue cheese on the filling.
Serve immediately.
