Best mediterranean Pan Con Tomate delicious Spanish tapa

Pan con tomate, which we make in our Spanish home of Guadalajara and can be found in many bars and restaurants across Spain, is based upon an old Cataluna tradition. The Catalonian tradition of "pa ambtomaquet" was originally known. It involved stale bread being rubbed with raw garlic and tomato wedges, and then drizzled with olive oil. Finally, salt it lightly. This is a great way to make the most of day-old bread. This recipe is still used in Cataluna, as well as many other places in Spain as one of  Best mediterranean.

This tapa was my first experience with it. It was at Calafell in Tarragona in Cataluna when I was invited by Marta to stay for a week. As the sun went down, my first night in Spain, Marta and I prepared the tostas with our friends and family to go along with a delicious barbecue featuring grilled sardines and chorizo, zucchini, and peppers. It was heaven. It was only the beginning of a wonderful visit filled with warm conversations and delicious, freshly prepared meals.



Pan con tomate is now a favorite recipe of mine and my husband. We blend raw tomatoes, olive oil and salt in a blender. I prefer to spread more oil on the bread, then add a generous amount tomato mixture and a little salt. When my son visits, this is his favorite breakfast. He also adds a thin slice jamon. Serrano (or even better iberico He adds a little bit of cinnamon and honey to the top. It was always ready when my parents visited from the States. It's so simple, but it's everyone’s favorite.



INGREDIENTS :

  • 1/2 baguette, cut into 1" rounds
  • 1 clove garlic
  • 1 medium ripe tomato
  • 2 tbsp extra virgin olive oil
  • pinch of salt

INSTRUCTIONS :

  • To remove the skin from garlic, use a knife to crush it. Slice a ripe tomato in half. Blend the garlic, tomato, 2 Tablespoons of olive oil, and a pinch salt in a blender. Blend until smooth

  • Toast baguette slices in the oven (broil), or toaster oven.

  • Spread a little olive oil onto each slice of bread, then add a tablespoon of the tomato sauce.

  • Serve with Jamon Iberico or Jamon Serrano, Prosciutto, tuna, or salmon.
